Washed, grown high in the mountains, roasted medium. Look for milk chocolate, toasted nuts, and a soft, clean sweetness. It's easy to like, as good from a drip pot on a Tuesday as from a slow pour-over on Sunday.\u003c\/p\u003e\n\u003cp\u003eI've had a soft spot for Mexico for a long time, so this is where Mi Cafeíto begins again. One sack of green coffee comes to about 35 bags, and once they're gone they're gone until the next sack.\u003c\/p\u003e\n\u003ch4\u003eBrewing it\u003c\/h4\u003e\n\u003cp\u003eWhole bean stays fresh longest; grind right before you brew. If you'd rather I grind it, choose drip \/ pour-over or French press \/ cold brew. Start at about 1 gram of coffee to 16 grams of water, and adjust to taste.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNo scale?\u003c\/strong\u003e Use 2 level tablespoons of ground coffee for every 6 oz of water (one “cup” on most coffee makers). For a full 10–12 cup pot, that's a little over 1 cup of grounds. Too strong or too weak?
